Ever since we got back from San Diego, I’ve been obsessed with baking, even more so than usual…I think being without an oven for three weeks made me appreciate mine all the more! This past weekend I was really craving monkey bread, so of course I also took it as an opportunity to have some fun and change up my recipe again. The result is this sweet bread made with Biscoff spread, a brown sugar and cinnamon lover’s heaven (I just loved the smell of the dough while it was rising)! I used my stand mixer to make it this time around, since I think it’s easier on the hands to let the stand mixer knead the spread into the dough. However, my pumpkin monkey bread post has directions on how to make the dough solely by hand, if you don’t have a stand mixer or would simply prefer not to use one. Nutella Swirl Coffee Cake

Today is one of those dreary, rainy days where I just want to stay inside and bake. Coffee cake is perfect for those days, and it’s one of my favorite things to make for breakfast or brunch. It’s quick to whip up, it’s forgiving, and you can do a number of things to transform it into something a little more elegant – add a crumbly top, drizzle on a glaze, or simply dust it with powdered sugar. However, I don’t think this coffee cake requires any of those things (although you certainly can add them if you desire). The rich, nutty flavor of the nutella speaks for itself, making it a decidedly unfussy cake to serve for a mid-morning snack. Serve with coffee, tea, or a tall glass of milk. Enjoy!

Grilled Personal Polenta Pizzas

Recently I’ve been craving grilled food. In fact, just a couple nights ago I made a meal we frequently have in the summer – hot dogs on the grill with sautéed peppers and onions, homemade relish, and homemade roasted potato fries. It definitely hit the spot, but it also reminded me that I hadn’t yet shared these personal polenta pizzas that I made for a light dinner last week, which I am quite addicted to now. I used my George Foreman grill since I didn’t want to brave the cold (the hubby is the true grill master around here), and it worked just as well. Also, if you prepare the polenta ahead of time or buy it pre-cooked, these can be ready in a snap for a quick lunch or light weeknight meal. Enjoy!

Chocolate Banana Cream Pie

Ever since Thanksgiving when I made a banana cream pie for my dad, I’ve had my mind on a version that includes chocolate since I love the chocolate-banana combo, especially in smoothies. I adapted this recipe from the one I used to make coconut cream pie. The resulting pie is luscious and creamy, and with a chocolate flavor that is complimentary rather than overpowering. You can easily dress up the pie with some chocolate curls, shredded chocolate, and sliced bananas, and you can even add white chocolate into the mix, too. This is a great pie to make during the winter when berries are out of season…although I have to say now that we’re nearing the end of February , I am definitely itching to welcome spring! I’m Back! Our Trip to San Diego

As promised, I’m back from my vacation! And, the first thing I want to do is give a huge THANK YOU to all of my lovely guest posters. Each one of their posts had me drooling and wishing I could get to my kitchen immediately to whip up all of their delicious treats! The reason I couldn’t however is because the hubby and I were in San Diego for the last three weeks – and even though we did have a tiny kitchenette in our hotel room, there was definitely no way to bake.
Gooey Red Velvet S’mores Bars

As I mentioned before, I’m taking a little vacation from blogging – don’t worry, I’ll be back! – but in the meantime, some of my favorite bloggers are stepping in to take the reins while I’m away. Today Jessica from How Sweet It Is is here; she’s not only one of the nicest bloggers I know, but she also has one of the most addicting blogs around! Not only is she always making me laugh (or swoon over photos of Bella!), but she also always has something delicious cooking on her stove and something decadent baking in her oven. One of my all-time favorite desserts are s’mores brownies. The graham crust, the gooey chocolate, the toasted marshmallows… I’m in heaven. If I’m letting every guard down, I must tell you that it’s quite possible I love the s’mores combination more than any other combination out there. It just has…EVERYTHING.
So s’mores brownie bars have been one of my go-to desserts for ages, but it wasn’t until last year when I created some decadent red velvet brownies that I thought to merge the two.

Here’s the thing about s’mores brownies: they are GOOEY if you don’t wait for them to cool. But um, who has time to wait for them to cool? Not I.

So in the spirit of being impatience, these are what your brownies will look like if you dig in while warm.
Yeah. Still decadent and gooey, just not so easy for forkless consumption. Totally worth it though. Do it!
