Strawberry Rhubarb Pie

Strawberry rhubarb pie is probably my all-time favorite pie. To me, there’s just something about the perfect combination of tart, spring rhubarb and sweet, summer strawberries that ushers in the first real days of summer. I’ve updated so many things about this recipe over the years that the new recipe bears little resemblance to the old one, and so I wanted to make sure to record the changes here – after all, this is where I keep all of my favorite recipes! For the crust and filling:
- 1 pie crust
- 2/3 cup sugar
- 2/3 cup flour
- 3 cups rhubarb, chopped
- 4 cups strawberries, halved
- 1 tsp ginger, cinnamon, cardamom, or nutmeg (optional)
For the crumble topping:
- 1 cup flour
- 1/3 cup packed brown sugar
- 1/2 cup butter, melted
Preheat the oven to 425 degrees. In a large bowl, mix together the filling ingredients until the fruit is well-coated. Next, make the crumble top. In a small bowl, whisk together the flour and brown sugar. Pour the melted butter over the flour mixture, and stir until combined – the mixture will resemble wet sand.
Roll out the pie crust to 1/8″ thickness, and then carefully place it in the pie dish. Trim the edges where there is excess, or just fold it under. Crimp or fold the edges as desired. Spoon the filling into the pie crust, and then drop the crumble topping over the top of the filling in chunks.
Bake 30 minutes. After 30 minutes, or if the topping is getting too brown, place a piece of foil on top. Bake 10 minutes longer, and then remove the pie from the oven. Let cool at least an hour before serving.
