Dutch Apricot Pie

Every year, I do my best to come up with something special to make my sister for her birthday. Last year I made teacup cupcakes, and the year before that I whipped up some Nutella-filled lamingtons. This year though, it’s all about the pie. Though I’ve only seen a few episodes of the show, my sister is a huge fan of Supernatural, and I’ve been filled in on numerous occasions that one of the main characters really loves him some pie. So, with a bag of frozen apricots I picked last summer at a friend’s orchard, I got to work making this simple pie with my favorite all-butter pie crust and a delicious crumble topping. Normally, I can’t wait to dig into a pie fresh from the oven – but this time I waited a few hours for the pie to set up, and it ended up being one of the best fruit pies I’ve ever made. So, to my sister, I hope you have an awesome birthday – I didn’t forget the pie!

For the topping:

Preheat the oven to 400 degrees. Roll out the pie crust to 1/8″ thick, and then carefully place it in a pie dish. Around the edges, fold under and press down any excess dough. Bake without any filling for about 10 minutes. In a large bowl, toss all of the pie filling ingredients together. To make the topping, mix together all of the topping ingredients in a medium bowl.

Pour the pie filling into the warm crust. Drop the crumble topping over the top of the filling, and then cover the edges with a pie shield or aluminum foil. Bake for 50-60 minutes. Remove the pie crust shield or foil and bake 10 minutes longer. Let cool at least an hour before serving.
