Easter Nest Cupcakes (Lemon Cupcakes with Lemon Buttercream)

If you haven’t yet made the Easter nests from my post a couple days ago, today I’m giving you another reason to whip them up: Easter nest cupcakes! Underneath the candy nests and buttercream are lemon cupcakes, since I think that lemon desserts are just perfect for spring…although rather than using a white cake like I did for my lemon-curd filled cupcakes a couple years back, I made these from a yellow cake base. I whipped up a simple lemon buttercream that I tinted light green, but you could certainly use any color you like; a variety of different pastel colors would be fun, too! I sent them to work with the hubby for his co-workers, and they all loved them – in fact, he told me that the ones who were a little skeptical about the candy nests on top ended up declaring it the best part of the cupcake! If you’re still looking for a cute Easter dessert that will elicit some oohs and ahhs from your guests, I recommend making a batch of these. Hope you have a fantastic Easter weekend!

To make the lemon cupcakes, preheat the oven to 350 degrees and line a cupcake pan with cupcake liners. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, cream the butter and sugar until pale. Beat in the lemon juice and zest and then the egg. Reduce mixer speed and beat in the milk or buttermilk just until combined. Add the flour mixture, beating until just combined. Spoon the batter into the cupcake liners. Bake 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan 5 minutes before removing the cupcakes to a wire rack to cool completely. Makes about 9-10 cupcakes.

To make the frosting, beat the butter until pale. Beat in the lemon juice, then gradually beat in the powdered sugar half at a time. Use a piping bag to frost the cupcakes as desired, and then gently press an Easter nest on top of each one.

  2. Lemon desserts are ALWAYS in season in this house! Though it would be really fun to do these with Robin’s Eggs and malted chocolate cupcakes too. Heck, I’d still end up eating all of them.
