Cardamom Pear Crisps and Desserts in Jars Giveaway
Are you thinking about fall yet? Truthfully, now that we’re already a week into August, I am. Don’t worry, I’m not about to start up with the pumpkin recipes or anything like that (yet). But when summer starts winding down a bit and the air begins to turn a little cooler, I start thinking about cozying up for autumn, my favorite time of the year…so when I recieved a copy of my good friend Shaina’s gorgeous new cookbook, Desserts in Jars: 50 Sweet Treats that Shine, I couldn’t help but turn to the recipe for Cardamom Pear Crisps. I love Shaina’s book for many reasons – her writing, the beautiful photos, the “fun factor” of having a perfectly portioned dessert in your own special jar (not to mention that as I always have a million jars around the house due to my business, it’s quite practical for me!). Also, with a chapter devoted to mixes for gift giving, you’ll always be prepared to bring a homemade touch to any special occasion. Today, Shaina has graciously allowed me to share her Cardamom Pear Crisp recipe with you that I’ve already fallen in love with…and, don’t forget to scroll down for your chance to win a copy of her lovely book!
For the pear filling:
- 20 small pears, such as Forelle or Seckele varieties, or 10 medium-size pears, such as Anjou (I used Anjous)
- Juice of 1 lemon
- 1/4 cup granulated sugar
- 2 Tbsp cornstarch
- 1/4 tsp ground cinnamon
For the crisp topping:
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup packed dark brown sugar
- 1/2 tsp ground cardamom
- 1/2 tsp ground ginger
- Pinch of salt
- 8 Tbsp (1 stick) unsalted butter
To make the filling, preheat the oven to 350 degrees. Core the pears and cut them into 1/4″ thick slices. Toss them with the lemon juice.
Toss them with the sugar, cornstarch, and cinnamon.
Fill six half-pint jars with the pears to 1/4″ from the top. To make the topping, whisk together the flour, oats, brown sugar, cardamom, ginger, and salt. Cut in the butter until crumbly. Spoon the topping over the pears and press down gently.
Place the jars 2 inches apart on a baking sheet and bake 25-30 minutes or until light golden brown. Let cool slightly before serving.
