3 Ingredient Nutella Cookies

As I mentioned before, I’m taking a little vacation from blogging – don’t worry, I’ll be back! – but in the meantime, some of my favorite bloggers are stepping in to take the reins while I’m away. Today Kristan from Confessions of a Cookbook Queen is here, one of the most genuinely lovely and absolutely hilarious people I know. Hey guys!! I’m Kristan from Confessions of a Cookbook Queen, and I’m so excited to be guest posting for Tracy today. She is seriously one of the nicest and most genuine bloggers I know and I count myself lucky to have her as a friend.

When Tracy asked me to guest post for her, I knew that I wanted to make something with Nutella. I am not allergic to peanut butter, but I know that for people like her who ARE, Nutella is a miracle. So it just so happens that I made some miraculous magic Nutella cookies just for Tracy!!

Wanna see how?

  • 1 cup Nutella
  • 1 cup sugar
  • 1 large egg

Preheat oven to 350 degrees. In the bowl of a mixer, combine the Nutella, sugar, and egg. Beat on medium speed until well combined, about a minute. Roll mixture into 1″ balls and place several inches apart (they spread quite a bit) on an ungreased, nonstick cookie sheet. Bake for about 10 minutes or until the edges are firm to the touch. Remove from oven and let cool on baking sheet for about 3 minutes. Carefully remove cookies to finish cooling on a baking rack.

These cookies are chewy and crunchy with a sugary bite…they remind me of the edge of a brownie!! I hope you enjoy them.

    GENIUS! I make the peanut butter version all the time, and throw in chocolate chips, raisins, sometimes a handful of oats for some texture…can’t wait to try these!

    Nutella is a gift from God sent to our household! My 4 year old daughter would eat it for breakfast, lunch and dinner if I would let her. I love super simple recipes. Can’t wait to try this one out!

    I only bought Nuttela by accident , and it was pure heaven. We are super fans of it. I think with this cookie I would ‘roll’ it into a cone and fill with some whipped cream. I know to many calories, but it would be so good. Thanks for the great recipe!

    I tried these but they went very flat and stuck to the parchment paper! :( suggestions to improve pls! Cos they tasted heavenly (what wasn’t stuck on the paper)

    @Safa I used a nonstick cookie sheet and they were fine. Flat, like you see in the picture, but fine. I removed mine after a few minutes on the sheet though so they could firm up a bit but not cool enough to be stuck. Maybe it was the parchment paper?

    I hate to say this, but I’m afraid that this is not a good combination. The gnutella flavor is lost and the sugar makes the outcome gritty. I would have rather had the three ingredients separately, and I’m sorry that I tried the recipe. Perhaps my tastes are different, but I would not try this recipe ever again. I threw out the batch.

    I too believe it was the paper. But they were so easy and tasted yuuuum!!! Usually when I try Nutella cookies they don’t give out the flavor it deserves. But these were Nutella lovers dream come true! Will try again for sure!

    I have made the peanut butter version of this cookie. I had no idea you could make them with nutella **hits forehead with heel of palm** These are definitely going in the must try pile.

    Just made these…(the smell is still wafting through the house as they cool, yum!)

    These almost remind me of chocolate pizelles because they get so flat and so big. I’d recommend not doing more than 6 at a time unless you want a big ol thin sheet of these! (Not that there’s anything wrong with that, mind you!)

    They’re going to be used as a crunchy base for a sundaw with one crumbled on top for good measure. Hurry up tomorrow!

    How many cookies should this yield? Making them now and it doesn’t seem like there will be too many. Might have to make a second batch. Good thing the Nutella was on sale!

    i made these tonight. i put mine too close 2gether & ended up with a thin sheet. stuck to my non-stick pan too. :( the pieces i salvaged were eaten & yummy tho! ;)

    You had me at “edge of a brownie.” These are awesome. Mine were overdone at 10 minutes, so you might want to check them at 8 or 9. I baked them on nonstick foil and they released easily after cooling a couple of minutes. Also, if you want to die and go to heaven, spread some Nutella on a cookie after it’s cooled.

    I made two batches to experiment to give to a friend. The first one I made with only a 1/2 cup of sugar and no flour; the second batch I used 1 cup of sugar and a little over a 1/2 cup of flour. The flour helped the cookies to keep its shape, but a whole cup of sugar caused some graininess and it was too sweet. So I personally would use a 1/2 cup of sugar and flour.

    My brothers loved it! It came out really chewy and crispy! I cut the sugar to half though. :) but overall it was really yummy! :)

    Tried them with half cup flour an half cup sugar to minimize sweetness. They taste good but totally stuck to the pan. Sprayed Pam spray and that helped but not very pretty looking. We will use the crumbles for ice cream topping.

    Just finished making these a few minutes ago and I am so disappointed! Aside from the fact that they were so thin and brittle it was impossible to get a whole cookie off the pan, they were also very grainy from all of the sugar.

    I tried creaming the mixture a little longer hoping that it would help dissolve the sugar a little more. I also thought refrigerating the dough might help with the spreading. But, sadly, I was wrong. I’ll try adding flour and less sugar next time, like was suggested in the above comments. :-)

    Honestly a huge let down. The cookies stuck to the nonstick pan so I tried greasing the second pan and they still did the same. They crumbled everywhere and left hard residue all over my pans! What a mess!

    I followed the recipe exactly.

    Huge disappointment, waste of my time and ingredients.

    I saw this same recipe elsewhere, only instead of sugar it calls for 1 cup of flour. Recipe specifically says “Do not add sugar!” That may be the problem with them getting too thin and sticking.
