It’s been snowing all weekend, and according to the weather this morning, it doesn’t show any signs of letting up today. It was actually rather nice over the weekend when I could sit by our Christmas tree sipping hot cocoa with nowhere to be, but now that it’s Monday and my usual 30-minute commute has doubled for the winter, it’s not so fun anymore. Fortunately, fresh, home-baked goods like these oatmeal date muffins make the morning just a little better. These muffins are not overly sweet, but they are perfect with a nice mug of coffee or hot chocolate. I baked them over the weekend so that I could enjoy them for breakfast all week…and I hope you enjoy them, too!

  • 1 cup flour
  • 1/2 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/8 tsp cardamom
  • 1 cup oats
  • 1 cup chopped dates
  • 6 Tbsp butter, melted
  • 1 cup milk
  • 1/2 tsp vanilla extract
  • 1 egg

Preheat the oven to 400 degrees and grease a muffin pan. In a medium bowl, whisk together the flour, sugar, baking powder, salt, spices, oats, and dates.

In a smaller bowl, mix together the butter, milk, vanilla extract, and egg. Stir the dry ingredients into the wet ingredients and mix just until incorporated.

Spoon the batter into the muffin pan.

Bake about 20 minutes, and then remove them to a wire rack to cool completely. Serve warm, preferably with a hot drink!
