Muddy Buddy Cookies

Whether you call them muddy buddies or puppy chow (according to Wikipedia a newer name is Chewbacca chew, for all the Star Wars fans out there), this fun snack is the same – cereal (usually Chex or a similar type of rice or corn cereal) coated with a mixture of melted chocolate, butter, vanilla, and peanut butter, and then powdered sugar. I used SunButter instead of peanut butter of course, because of my peanut/nut allergy – but you can easily substitute peanut butter directly for the SunButter in this recipe if you like. Either way, these cookies will bring you back to your childhood – and they’re almost as much fun to make as they are to eat!

For the cookies:
I made a batch of these SunButter cookies; the only thing I changed was that I didn’t roll the cookies in granulated sugar before baking since they are rolled in powdered sugar later.
For the coating:
- 1 stick butter (you can use more or less depending on how thick you want the chocolate to be)
- 2 cups chocolate chips
- 1 tsp vanilla extract
- Powdered sugar, for rolling
While the cookies are cooling, melt the stick of butter and chocolate in a microwave safe bowl. Stir until smooth, and then stir in the vanilla extract.
After the cookies have cooled completely, dunk them in the chocolate (I liked my chocolate mixture a little on the thicker side).
Roll each of the cookies in the powdered sugar. Enjoy!

Your cookies look great, as do all the cookie thumbnails . . . I find it funny that even though I have a cooking blog (well, not exclusively about cooking, but whatever), I have yet to post a single cookie recipe. I love eating them, but usually leave it to my husband to make them. =)

This may be a dumb question, but … do you let the chocolate cool / harden before attempting to roll in the powdered sugar?

Michelle – Not dumb at all! I rolled my cookies in the powdered sugar immediately, but you can certainly wait until the chocolate has cooled a bit more if you like. Hope that helps!
