The weather here has been so odd lately – this past weekend, we’ve gone from sweltering 90-degree days to cool and crisp 60-degree days, as if the weather suddenly decided that it needed to get with the program with the coming of September and all things fall. Of course, I didn’t mind at all, and decided that the change in weather was the perfect opportunity for me both to fire up the oven to bake something sweet and to use up the last of my summer peaches. I really only needed two large peaches to make this crumble, and it came together pretty quickly…so if you only have a few peaches on hand and need a quick dessert, give this a try!

For the filling:

  • 4 cups peaches, sliced
  • 2 Tbsp flour
  • 3 Tbsp sugar
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon

For the topping:

  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup quick-cooking oats
  • 1/8 tsp salt
  • 1/2 stick butter, cubed

Preheat the oven to 375 degrees. In a medium bowl, toss all of the filling ingredients together.

For the topping, use a pastry blender to cut the butter into the flour in a medium bowl. Add in the brown sugar, oats, and salt.

Spoon the filling into an 8×8″ baking dish and sprinkle the topping over the peach mixture.

Bake 25-30 minutes or until the top is golden brown.

Let cool 15 minutes before serving.
