HBin5: Avocado Guacamole Bread

For this month’s HBin5, I decided to try out the avocado guacamole bread. Like Michelle, I also thought that the loaf would turn out to be slightly green, but it wasn’t. Still, it had a very interesting flavor. I made a half recipe of the bread, and while I can’t say I was all that crazy about it, I’m glad I tried it out. I think what I wasn’t too fond of was the tomato flavor in the bread – I don’t usually put tomatoes in regular guacamole in the first place, so perhaps that’s why. If you love tomatoes and guacamole, then this is a great bread for you!
In a large bowl, mix together the avocado, tomato, and garlic. Then, add in the water.
In a large container, whisk together the dry ingredients.
Add the wet ingredients to the dry ingredients, mixing just until combined. Let rise for 2 hours.
When ready to bake, preheat the oven. Usually I use a baking stone, but this time I placed the dough in a lightly greased loaf pan.
Bake about 30 minutes or until the top is golden brown.

I’m sorry you didn’t like this bread. We loved it here but I made it into focaccia and it was wonderful for sandwiches. Your loaf looks very pretty.

This looks like a great base for savory bruschettas with olives and cheese…pesto, mmm! I think I´d love it. Thanks for sharing.

Avocado bread?? Now, that’s really interesting.. I really wouldn’t have thought bread and guacamole go together ..

I don’t know if I would like this bread or not. I do love guacamole… pizza dough or bruschetta might be really good with it. Way to be adventurous!

I have the book and have wondered about that recipe! Now I really want to try it–the loaf is beautiful and looks delicious…plus, I LOVE tomatoes in my guacamole.
