HBin5: Chocolate Espresso Whole Wheat Bread

For this month’s HBin5 recipe, I decided to bake the chocolate espresso whole wheat loaf. I’ve never made chocolate bread before, although I have made brioche with chocolate ganache. I’m a big fan of enriched breads, so I enjoyed this one very much. And while I can’t post the recipe, I took step-by-step photos as I made the bread, so I’ll detail those steps below. I highly recommend getting a copy of the book if you haven’t already and trying this one out, especially if you’ve never tried any yeasted sweet breads before. Also, if you’re a chocolate lover but not so much in love with coffee, don’t worry – the coffee taste isn’t strong at all. Give this loaf a try today and chase away the Monday blues!

In a large container, whisk together the flours, cocoa powder, yeast, salt, and vital wheat gluten.

Combine the eggs, water, coffee, oil, and honey in a small bowl.

Combine the liquid ingredients with the dry ingredients in the container and stir in the chocolate chips, all without kneading. Cover loosely and let rise 2 hours. Chill at least 2 hours before using.

On baking day, grease a loaf pan. Place the dough in the pan and let rise covered with plastic wrap about 1 hour and 45 minutes.

Preheat the oven to 350 degrees. Brush the loaf with egg wash if desired, and bake 45-50 minutes. Sprinkle with powdered sugar!

    Once again great job! Glad you enjoyed this bread and you’re right the coffee flavor is not pronounced at all but enhances the chocolate just perfect!

    Looks great! You’re right! The coffee flavor is not too strong. I thought it had a good flavor although mine was a bit dry.

    I really liked this recipe but I’m thinking I really need to try that Brioche with ganache.
    I just used regular coffee and you couldn’t taste it at all.

    So chocolately looking. I could not detect any of the coffee flavor though I would not have minded. I like coffee. However my husband and son don’t and neither tasted it. I think it just pulls out more of the chocolate flavor. sort of intensifies it.
