Cranberry Bread

When I first saw this bread on A Bowl of Mush, it immediately went on my “to make” list. I had just made my cranberry coffee cake and I had fresh cranberries on the brain! I ended up making it as part of our homemade Christmas gift baskets, so I didn’t have any myself, but I was told that it was very good (and it definitely smelled heavenly!). Next time I will definitely make two loaves instead of one!

Here’s the recipe, adapted from A Bowl of Mush:

  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup orange juice
  • 2 Tbsp butter, softened
  • 1 egg, well beaten
  • 2 cups roughly chopped fresh cranberries

Preheat the oven to 350 degrees and grease a 9×5″ loaf pan. Chop the cranberries into small pieces. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Mix in the egg, orange juice, and butter.

Fold in the chopped cranberries, then spread the mixture evenly in the greased pan.

Bake about 55 minutes. Cool for at least 15 minutes before slicing.

    Yay something else to use my leftover cranberries on.

    You most certainly can! I did the same when I made it since I had a bunch of leftover cranberries from Thanksgiving. :-)

    This is also going on my “to make list”….thanks for the info on frozen cranberries, I did not know that you could use frozen ones! I wish I had some of this bread right now….deliciousness!!

    Awesome way to use the cranberries. I always use cranberries for my Christmas table decorations and I never know what to do with all of them when I am done!

    the flour in your lovely green bowl looks like a heat. this makes me want to make cranberry bread even more. :)

    Yum! I love fresh cranberries in a loaf. I pop them in whole for my banana breads. Looks delicious!

    I made this for Thanksgiving dinner. The fresh cranberries made the bread. It was delicious!
