HBin5: Master Recipe

I mentioned a little while ago that authors Zoë François and Jeff Hertzberg were coming out with a new book called Healthy Bread in Five Minutes a Day, which is full of delicious whole wheat and even gluten-free recipes. I absolutely love their first book, Artisan Bread in Five Minutes a Day, so when Michelle of Big Black Dog announced that she would be hosting a HBin5 baking group, I definitely wanted in. In fact, the group has quite the baking schedule – one that I already know I won’t be able to keep up with! So while most of the group will be posting multiple breads bi-weekly, I am going to be a once-a-month baker, and I’ll probably only pick one or maybe two recipes each month to bake. Also, while we are asked not to post the recipes in the book, I’ll still be posting my usual step-by-step photos for each bread that I make. If the authors choose to include a recipe on their website, I’ll also make sure to include a link to that recipe on their site.

Now, without further ado, let’s get to the bread!

This month, one of the recipes on the list was to make the simple whole grain master recipe, which you can find on the Artisan Bread in Five website here. Since I already had a batch of whole grain dough in the refrigerator, I decided to make a large loaf for sandwiches.

First, mix together the dry ingredients in a large bowl. Add the water to form a wet dough. Cover loosely and leave to rise for 2 hours. When finished, store in the refrigerator and use over the next two weeks.

Here’s what I had left in my bucket, which I shaped and then let rest the necessary 90 minutes before baking.

Preheat the oven to 450 degrees with your baking stone and broiler pan inside. When the oven is ready, slide the bread on to the hot stone and pour 1 cup of water into the broiler pan. Bake 30 minutes (mine took a little longer because it was larger than the usual grapefruit-sized portion) and then let cool completely on a wire rack.

And that’s how easy it is to have healthy, fresh bread whenever you like. I’m looking forward to sharing more wonderful breads from this book soon!

    Great looking bread. Makes me hungry just looking at it. I love baking bread too. I think it’s one of my favorite things to bake. I think this might have to be a baking group I need to be a part of. I’ll have to look into it. Thanks for sharing.

    There is something hugely satisfying and rewarding about baking bread from scratch, isn’t there? I just love it and really don’t do it as often as I’d like. You’re inspiring me to do it very soon, though! That loaf looks so good!
