Creamy Mashed Potatoes

In order to make some room on the stove for all the cooking I’ll be doing on Thanksgiving Day, I decided to prepare the mashed potatoes ahead of time. Mine aren’t really anything fancy, but they’re definitely a staple for our Thanksgiving Day feast! I like mine nice and creamy, so after mashing them by hand, I beat them with a hand mixer. And, I love that I can freeze them to save on time!

  • 7 baking potatoes
  • 1 cup sour cream
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup milk

First, peel the potatoes (they don’t have to be perfect).

Cut each of the potatoes in half, and then put them in a large pot. Pour in enough water to cover all of the potatoes. Cover and bring to a boil for about 20 minutes or until the potatoes are tender. Drain the water from the pot.

Mash the potatoes by hand, and then add in the sour cream, garlic powder, onion powder, milk, salt, and pepper. With an electric mixer, beat until smooth. Try to get out as many of the lumps as possible.

Spoon into a lightly greased casserole dish. At this point, the potatoes can be wrapped in foil and frozen for up to a month. The day before you want to serve them, thaw them overnight in the refrigerator. Bake covered (until the last 10 minutes) at 350 degrees for an hour or until heated through. If you want them to be even creamier, mix in some extra milk and butter before baking. Serve them plain, or top with green onion, chives, or crumbled bacon.

    Mmm you can add less sour cream and then put in some cream cheese too if you want – to make them extra smooth (and um…unhealthy ;P) That’s how the Mennonites did it when they made them for my sister’s wedding. They were delish!

    I love mashed potatoes…heck I love potatoes fixed just about any way. I’m making a similar recipe for our Mashed Potatoes at Thanksgiving. Can’t wait to taste them!

    Mashed potatoes is a MUST for me on Thanksgiving! Leave anything else out I need them!! lol :)
