Dark Chocolate Mousse Pie

If you’re looking for an easy, no-bake dessert recipe, you’ve come to the right blog post. If you also love chocolate – this is your lucky day! Like the Lemonade Cheesecake Pie I posted about a couple days ago, this pie is quick and easy, and there’s no baking required. But unlike the lemonade pie, it’s filled with chocolate.
This is a very good thing.
You’re going to need:
- 1 graham cracker crust (yup, I cheated. I do that sometimes when I’m lazy. But take a look back here if you want to make your own crust – just substitute graham crackers for the vanilla cookies.)
- 2 Tbsp cold water
- 1 envelope unflavored gelatin
- 1/3 cup boiling water
- 1/2 cup dark cocoa powder
- 1 cup sugar
- 1 and 1/2 tsp vanilla extract
- 2 cups heavy whipping cream
First, pour the cold water into a small bowl, and empty the contents of the gelatin packet into it.
Boil the other 1/3 cup of water. Pour the boiling water over the gelatin mix, and stir until the gelatin dissolves completely.
Mix together the cocoa powder and sugar, and then add in the vanilla and the whipping cream.
Beat on medium-high speed until the mixture forms peaks.
Pour in the gelatin mixture, and then mix on medium-high speed again until well-blended.
Pour the chocolate filling into the crust…
…and then let the gelatin set in the refrigerator for 2 hours.
I know, it takes twice as long as the lemonade cheesecake pie did. But that’s because it’s twice as good. You’ll just have to trust me until you try it for yourself!

My hubby would LOVE this. Dark chocolate is his fave…and mine, too. I already planned a dessert for dad’s day but, I just might have to make this another time.

I just made this and while the chocolate was sooo yummy, the gelatin hardened in chunks and refused to be broken up by my mixer. Any tips?

Sarah – I’d maybe try heating up the gelatin mixture again to see if it will smooth out some. Hopefully it will set up again once chilled…I’ve never tried it before though so I can’t promise anything, but that’s what I would do! Good luck!
