Beignets

I thought after my last post about the brioche with chocolate ganache, things couldn’t really get much better – but then I tried these. They are made from the same brioche dough, but they’re fried. And doused with powdered sugar. And those two things can only mean goodness (although, maybe not for the scale the next morning).
First, tear off a grapefruit-sized piece of the brioche dough.
Roll it out to about 1/2″ thick – I think my dough was a little on the short side.
Cut the dough into into 2″ squares, and then let them rest for about 15 minutes.
Now, it’s time to fry. The oil should be heated at 360-370 degrees Fahrenheit, but since I didn’t have an oil thermometer on hand, I just had the oil heating while I did all the other steps so it would be nice and hot. It seemed to work out pretty well. I fried the pieces, 2 at a time, until each was golden brown on both sides. When each set of two pieces was finished, I set them on paper towels to drain and doused them with powdered sugar.
These were delicious, and the whole house smelled of fried dough. Someone needs to make that smell into a scented candle. Check them out:
