Buffalo Chicken Pizza

Buffalo Chicken Pizza - 13

I love Buffalo chicken wings. I can pretty much eat them any time of the year, even when it isn’t football season (yes, I’m a girl, and I love football. That’s just how it is). I can make a mean wing dip, which is perfect for serving as an appetizer…but, I also wanted something I could eat as a meal, and therefore feel less guilty about than I would finishing off half a pan of that dip. That didn’t happen, really. You believe me, don’t you??

Anyway, I now frequently make my own Buffalo chicken pizza, with homemade pizza dough. Now, don’t be scared away by the homemade dough part.  It’s really easy, and it doesn’t even take that long to rise.  Here’s what you’ll need for the dough.

Servings: 8

  • 3 1/2 cups flour
  • 1 tsp salt
  • 2 tsp active dry yeast
  • 1 1/4 cups lukewarm water
  • 1/4 cup olive oil

And here’s the rest of the stuff you’ll need:

  • 2 chicken breasts
  • Frank’s Red Hot sauce
  • Crushed red pepper
  • Tabasco sauce (optional)
  • Mozzarella cheese

For the dough, mix the flour and salt together in a large bowl.

Make a well in the center, and pour in the water, 2 Tbsp olive oil, and yeast. Let the yeast dissolve for 10-15 minutes.

With a wooden spoon, incorporate the water into the dough.  Knead the dough until it’s smooth.  Brush a medium bowl with olive oil, and place the dough into the bowl.  Roll it around to coat it in the oil, then cover it and leave it for about 40 minutes to rise.

In the meantime, get your chicken ready.  Cut the chicken breasts into bite-sized pieces, and put them in a bag you can seal shut.

Add in the desired amount of Frank’s Red Hot sauce, crushed red pepper, and Tabasco sauce, and shake the bag to coat the chicken (you can even do this the night before if you really want, and let it marinate).

Now, toss the chicken into a skillet and cook until no longer pink in the center.

At this point, our dough should be almost ready. Preheat the oven to 400 degrees, and grease a 13″ pizza pan.  The dough should be about doubled in volume.

Roll the dough out onto the pizza pan.

Then, pour on the “sauce” – more Frank’s Red Hot.

Buffalo Chicken Pizza - 9

Drop the Buffalo chicken on to the dough.

Then, sprinkle generously with mozzarella cheese.

Bake for about 20 minutes.  The cheese should be golden brown like this:

Yum!  Serve with a tall glass of ice water.

How much Frank’s do you end up using?

Hmm, that is a good question. I think probably about 2 Tbsp for the chicken marinade, and 3-4 Tbsp for the pizza “sauce.” :-)

This pizza looks awesome! And pizza is definitely one of my favorite things to make for dinner.. Considering my husband’s favorite pizza is Domino’s Texas BBQ – this would be a huge hit at our house :) Thanks for the recipe.
