Chicken Alfredo

I loooove alfredo sauce. It’s one of my favorite things to order at pretty much any Italian restaurant, but I love to make it at home even more. I’ll warn you now that this is NOT a low-calorie sauce. But oh, it’s worth it.
You only need a few things for this sauce, which is another reason why I love it.
Servings: 3-4
- 1/2 cup heavy cream
- 1/2 cup butter
- 3/4 cup grated parmesean cheese
- Salt & pepper to taste
- Garlic powder or minced garlic to taste
You’ll also need 2-4 chicken breasts, and 1/2 box of linguine or spaghetti.
Here’s what to do:
First, get the water on the stove for the pasta, and cook it according to package directions. While you’re waiting for the water to boil, cook the chicken. I cut mine into bite-sized pieces and cooked it in a skillet, but you can cook it any way you like (grilling is especially delicious).
For the sauce, melt the butter in a skillet until it is almost completely melted, and then add in the heavy cream. Stir frequently on medium heat until it bubbles; it will thicken slightly.
Once it is bubbling, add in the parmesean cheese and reduce the heat to low. Stir until the cheese is melted, then add in the salt, pepper, and garlic; it will thicken even more. You’ll end up with about 1 cup of sauce.
Toss the chicken and pasta together. Pour the sauce over the top, and then mix it in. Mmmm.
If you have any leftover sauce, just store it in the fridge in an air-tight container.

You know what I’ve discovered? That when I make the alfredo sauce myself, I like it. Otherwise, it tends to be too heavy for me.

Made this last night and served with gluten-free pasta. It was fabulous…worth every calorie!
