Happy Mum’s Day: Petits Fours

Petit fours - 5

Finally, I finished the mother’s day treats: petits fours!  Tiny, double-layer cherry chip cakes covered in poured fondant, each with a mum on top made of royal icing.

I baked them using a bite-size cake/brownie mold:

Petit fours - 1

Once cooled, I cut off the tops to level the mini cakes.  Then, for each petit four, I stuck two of the mini cakes together with pink icing:

Petit fours - 2

I made the mums with pink royal icing ahead of time, and stuck them in the fridge to harden.  And finally, last night, I made the poured fondant to cover the cakes with:

Petit fours - 3

I stuck those in the fridge to harden as well, and then I used a bit of pink frosting to secure the mums to the tops:

Petit fours - 4

Oh, and I tried one.  I had to make sure they turned out well, of course.

Petit fours - 6

Mmmm.

Enjoy your mum’s day!
