Sometimes hubby and I are in the mood for something different, and last night was one of those nights. Fortunately, I had a little bit of time, so I dug out my spring roll recipe and went to work.  You can also serve them as appetizers – fill them with whatever you’re in the mood for!

Servings: 12

  • 12 oz lump crab meat, drained
  • 2 small stalks of celery
  • 1/2 red bell pepper
  • 1 small onion
  • 1/2 cup fresh bean sprouts
  • 1/2 tsp thyme
  • 1/2 tsp cilantro
  • salt & pepper
  • 1 Tbsp soy sauce
  • 1 lb phyllo dough
  • Vegetable oil
  • Rice, if desired

First, pour about 1 and 1/2 inches of vegetable oil in your deep fryer, and get it heating.  Then, finely dice the celery, red pepper, onion, and bean sprouts.

Sauté the celery, pepper, and onion in a skillet for about 2 minutes; then add them to the bean sprouts in a medium bowl.

Sprinkle on the thyme, cilantro, salt and pepper.  Add in the crab and toss.

Take one sheet of the phyllo dough, and fold it in half.  Cut that in half for two spring rolls.  Pile on about 1 and 1/2 Tbsp of the mix to each half.

Fold the top and bottom edges on top of the mix, about an inch  in.

Fold the side edges over, then brush the outside edge with a little bit of water to secure the dough to itself…you don’t want the filling to explode out of the roll when you drop them into the fryer.  Let the dough dry for just a few minutes.

Now, drop one or two rolls into the hot oil.  Fry about 1 minute before flipping to the other side.  Flip a second or third time, until both sides are golden brown.

Remove rolls from the oil, and let the excess oil soak up on a paper towel.  Serve with rice if desired!

    Thank you! You should definitely try them some time, they were very good. I think next time I might try them with shrimp. :-)

    Those are making me hungry! I am a huge fan of egg rolls/spring rolls but have never tried making them…you’ve inspired me!
