I make this tart every year around Memorial Day. It’s the perfect light summer dessert! It’s been so beautiful outside lately that I just couldn’t hold back any longer. Here’s what you’ll need:
For the crust:
- 1 1/2 cups vanilla cookie crumbs
- 5 Tbsp butter
For the filling:
- 8oz cream cheese, softened
- 1/3 cup sugar
- 1 cup whipping cream
For the topping:
- Sliced strawberries, blackberries, and blueberries
First, melt the butter. Mix it with the cookie crumbs until well blended, and then press into a 12″ tart pan. Stick it in the refrigerator while preparing the filling.
Whip the cream on high speed until it forms stiff peaks. In a separate bowl, mix together the sugar and cream cheese. Then, mix the two together until well blended.
Fill the crust with the cream cheese filling, then return it to the refrigerator for about 15 minutes.
Slice the strawberries, and then arrange the berries on top! Store in the refrigerator. Yum!
