Cajun quesadillas

I’ve been making regular chicken-and-cheese quesadillas on the grill, but I decided I wanted to give them a little twist. So, I threw together a mix of spices to make these Cajun-style. I hope you enjoy them!

  • 8 (8-inch) fajita wraps
  • 1 green bell pepper
  • 1 red bell peper
  • 1/2 medium onion
  • 1 stalk celery, diced
  • 1 tsp salt
  • 1 tsp freshly ground pepper
  • 1 tsp nutmeg
  • 1 tsp cumin
  • 1 tsp crushed red pepper
  • 1 clove minced garlic
  • 2 Tbsp Worcestershire sauce
  • butter
  • 2 chicken breasts, cooked and shredded

Cut the bell peppers and onion into strips.

Toss all the ingredients except the chicken into a frying pan, and sauté until vegetables are lightly browned. Toss the chicken with the vegetable mixture, then add it to fajita wraps.

Grill the fajita wraps until lightly browned, then serve.
